Ingredients:
1lb Boneless Skinless Chicken Breast - cut into chunks
2 Bell Peppers cut into large chunks
1 pint of cherry tomato's
2 zucchini sliced in thick chunks
1 red onion cut into chunks
3 tbsp of extra virgin olive oil
3 tsp minced garlic
4 tbsp lemon juice
1 tsp dried oregano
2 tsp rosemary
reduced fat feta cheese
salt and pepper
Directions:
Marinade: Combine 2tbsp olive oil, minced garlic, oregano, rosemary, salt, pepper, and 3tbsp lemon juice. Coat chicken with marinade and allow to sit covered in fridge for 30-45 min. Combine remaining olive oil, lemon juice, and some salt and pepper and set to the side. (This will be used to brush vegetables while grilling.
Skewer all vegetables (we always skewer them separately to allow them to cook evenly.) Skewer chicken. Place on grill. While the vegetables cook brush them with the lemon/oil marinade. Check chicken for doneness. Vegetables should be browned and soft.
Sprinkle 1/8 cup of feta on each serving of Chicken Skewers/Veggies.
This dish is excellent with brown rice!
